WHAT DO I DO?

I'm a full-time chef at a SEN school, creating

ADHD-supportive meals every day for our post-16 students.

Many of our young people live with ADHD, autism, or traits associated with these conditions and I've seen firsthand how food can help them thrive-calming bodies, sharpening focus, and regulating energy.

Every dish is made from scratch using unprocessed ingredients. No additives. No refined sugar. Just real food that supports real change.

REAL FOOD = MORE ENERGY

Real food doesn't just feed the body it fuels the brain.

I avoid artificial colours, sweeteners and preservatives, I use slow-release carbs, omega-3s, and gut-friendly whole foods to keep energy balanced and behaviour steady.

Once you understand that ADHD symptoms can be fuelled or calmed by what's on the plate, you can't unsee it. That knowledge changes everything.

From breakfast to bake day, my menus are loaded with brain loving ingredients: omega-3s, whole grains, zinc, magnesium, natural sweetness and herbs instead of sugar and E-numbers.

Students grow some of the veg themselves. They ask, "what's in this that's good for me?" That curiosity? That's where the magic happens.

WHY DO I DO THIS?

Every day at Maplewell Hall Post 16, I see first-hand what happens when young people are given real food made from scratch.

Students who once survived on beige foods begin trying new ingredients. Energy becomes steadier. Focus improves. Confidence grows.

This isn't about perfection. It's about giving young people the best possible chance to thrive.

After fifty years in professional kitchens, from luxury hotels and superyachts to research stations in Antarctica and now Maplewell, I genuinely believe that some of the most important work I've ever done is helping young people discover the power of real food.

That's why I do what I do.

Real, wholesome food is the foundation of true well-being.

Minor changes in your eating habits lead to major changes in your health.

At school, we've made small but powerful shifts: cutting out additives, switching to slow release whole grains and using natural sweetness from fruits and unrefined sugars.

These changes may look simple on the plate-but they create huge results in the classroom. Fewer crashes, more concentration and better behaviour.
